Huge crush on the cuisine of Japanese Michelin starred chef Hideki Nishi. Based in the 15th arrondissement of Paris, this very discreet chef trained at the Taillevent and especially at the George V has better understood the spirit of French gastronomy than many French-born chefs. He adds his lovely Japanese touch with wonderful products (Kagoshima Wagyu A5) and meticulous dressings. His vol au vent Gillardeau oysters and sweetbreads is a delight! Go for it!

I was so happy to meet the amazing 3 Michelin stars chef @ericpras_officiel at @kaviari_paris with the sparkling @helene_luzin a few months ago. Now I’m so impressed with what the chef at @maisonlameloise_officiel (Burgundy) has come up with with caviar and cauliflower. ❤️🇫🇷🍽️✨

I was lucky enough to be invited by the Michelin Guide to two days of incredible celebrations for the French star ceremony. The opportunity to discover the wonderful Alsace region, its cheeses, its wines and many other wonders.
Congratulations to the only new 3 michelin stars chef @alexandrecouillon and to all the other chefs. So happy for @omardhiab_ (check my recent reel) and @georgiana_viou who got their first star and so sad for @jeromebanctel and @florentpietravalle who both deserved one more star.

One day, I had the chance to have lunch with great chef Guy Savoy in his kitchen and he told me about his favorite signature dish : braised mussels and mousserons (mushrooms), "surf and turf" sauce.
« In this dish you have a sea product and a product from the ground. Both are wild ! Even if mussels can be cultivated, mousseron can only be found in the Wild. My idea was to associate the soft, oily consistency of the mousseron with the dry, iodized side of the mussels. Mussels and mousseron both have this soft consistency mussels are really soft inside and lightly caramelized both ingredients consistencies are interacting and both juices flavors perfectly complement one another. Just add a pinch of pepper and a dash of lime, two rocket leaves and enjoy the wilderness ! »

Short trip to Copenhagen to visit one Michelin starred restaurant Formel B run by the chefs @kristianarpe and @amgildjochumsen. Really interesting to see Danish seasonal products sublimated in a modern dining room with a typically Nordic design. Don’t miss the desserts that are pieces of art. Not to mention the wine list that could nearly impress a Frenchman, even a Frenchman who loves Burgundy.

As the Michelin star ceremony is coming up, I had the chance to come back at ✨ Le Gabriel at Parisian palace @lareserveparis to meet a great French chef at the top of his game with my #teamjaifaim @emerydolige and @adrienfoodinparis . At the beginning of the lunch, @jeromebanctel was very serene and told us: « I hope you guys are hungry because I am going to showcase everything I can make! ». This yummy words were followed by a menu of phenomenal mastery, as satisfying as it was technical, totally exhilarating from beginning to end: carrot cooked in lime, squid in duck juice, sole and truffle, lobster and kohlrabi... Obviously at ease with exceptional products, Jérôme Banctel also knows how to sublimate much more accessible products such as mackerel from Brittany and above all the pig’s head, which earns its ticket to haute gastronomy in a stunning surf & turf (associated with shellfish and seaweed cream) that is as daring as it is unforgettable. Not to mention that this haute-couture défilé of dishes was highly sublimated by the exciting pairings of great sommelier @gaetan.lacoste. We hope that this year there will be no misprint in the next Red Guide. Finger crossed 🤞.

Matthieu Hervé who has worked at Daniel in NYC and at the Negresco in Nice has created a real gastronomic experience in this charming castle with some dazzling dishes like this very fresh and spicy amberjack and a stunning haute couture John Dory, not to mention his yummy croc’scallop.

His « croque sweetbreads » and oysters n1, cauliflower and toasted brioche condiment were real wonders. Rush there before he gets his first Michelin star in March.
